Ingredients
500g corn for hominy
1 liter of water
1 liter of milk
1 can of condensed milk
200g sugar (or to taste)
100g grated coconut (optional)
Cinnamon powder to taste
Cloves to taste
Salt to taste
Directions
- Wash the hominy well and leave it to soak in water for at least 8 hours or overnight.
- After the soaking period, drain the water and place the hominy in a pressure cooker. Cover with water, add a pinch of salt and place over medium heat. As soon as it comes to pressure, cook for about 40 minutes or until the hominy is soft. Reserve.
- In another pan, add the milk, condensed milk, sugar, grated coconut, ground cinnamon and cloves to taste. Mix well and cook over medium heat, stirring constantly to avoid sticking to the bottom of the pan.
- Once the broth is hot and well mixed, add the cooked and drained hominy. Cook over low heat for another 20 to 30 minutes, stirring occasionally, until the hominy is very creamy and the flavors blend.
- Turn off the heat and let the hominy rest for a few minutes before serving. Serve hot or cold, sprinkled with more ground cinnamon, if desired.
- Hominy can be stored in the refrigerator for up to 3 days. If desired, it can be frozen in individual portions and reheated when necessary.
