Ingredients
2 cups of white rice
4 cups of water
1 head of broccoli
2 tablespoons olive oil
2 cloves of garlic, chopped
Salt to taste
Pepper to taste (optional)
Grated cheese (optional, for sprinkling)
Directions
- Wash the broccoli head well under running water.
- Separate the florets into smaller sizes.
- Peel and chop the thickest broccoli stalks.
- In a large pan, add 4 cups of water and bring to a boil over high heat.
- When the water is boiling, add the rice and a pinch of salt.
- Reduce heat to medium-low and cook rice until water is absorbed and rice is tender. This should take around 15-20 minutes. Reserve.
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 1 minute, until fragrant.
- Add the broccoli stalks to the skillet and cook for 3-4 minutes, stirring occasionally.
- Then add the broccoli florets to the skillet and continue cooking for another 5-7 minutes, or until the broccoli is tender but still crunchy.
- Mix the cooked rice with the sautéed broccoli in the pan.
- Season with salt and pepper to taste.
- If desired, sprinkle grated cheese on top before serving.
- Serve hot as an accompaniment to other meals or as a main dish.
