Ingredients
1 large head of garlic (or 2 small ones)
1/2 cup extra virgin olive oil
Salt to taste
Ground black pepper to taste (optional)
Directions
- Preheat the oven to 180°C.
- Cut off the top of the garlic head to expose the garlic cloves.
- Place the head of garlic on a sheet of aluminum foil and drizzle with a little olive oil.
- Wrap the garlic head tightly in aluminum foil.
- Bake in the preheated oven for about 30 to 40 minutes, or until the garlic cloves are soft and golden.
- Remove the head of garlic from the oven and let it cool slightly.
- Once cool enough to handle, squeeze the roasted garlic cloves out of their skins and place them in a food processor or blender.
- Add remaining olive oil, salt, and ground black pepper, if using.
- Grind everything until you get a homogeneous paste. If necessary, add more olive oil to reach desired consistency.
- Transfer the garlic paste to a clean, airtight container and store in the refrigerator for up to two weeks.
