Ingredients
500g tripe (beef tripe)
500g white beans
2 pepperoni sausages cut into slices
1 large chopped onion
4 cloves of garlic, chopped
2 chopped tomatoes
2 bay leaves
1 chopped green pepper
Black pepper to taste
Salt to taste
Chopped green chili to finish

Directions
- Wash the tripe well under running water, removing any residue or dirt. Cut it into smaller pieces.
- In a pressure cooker, place the cut tripe, cover with water and bring to a boil over medium heat. Let it boil for about 10 minutes.
- Drain the boiling water and wash the tripe again. This helps remove excess fat and impurities.
- In the same pressure cooker, place the cleaned tripe, the white beans (previously washed and left to soak for a few hours), the Calabrian sausage, the onion, the garlic, the tomato, the pepper, the bay leaves, the pepper -king and salt to taste.
- Cover with enough water to cover all the ingredients and cover the pressure cooker.
- Cook over medium-high heat for about 30-40 minutes after coming to pressure. Be sure to follow the safety instructions for your pressure cooker.
- After the cooking time, turn off the heat and wait for the pressure to release naturally.
- Open the pan and check the doneness of the tripe and beans. If necessary, cook for a few more minutes without pressure until everything is soft.
- Adjust the salt, if necessary, and finish with chopped green chilli.
- Serve the tripe with hot white beans accompanied by white rice or whatever you prefer. Enjoy!
