Ingredients

  • 3 eggs

  • 1 cup of sugar

  • 1/2 cup vegetable oil

  • 1/2 cup fresh lemon juice

  • 1 tablespoon lemon zest

  • 1 and 1/2 cups of wheat flour

  • 1 teaspoon of baking powder

  • A bit of salt

Directions

  • Preheat the oven to 180°C. Grease and flour a cake pan.
  • In a large bowl, beat the eggs with the sugar until you obtain a creamy mixture.
  • Add the oil, lemon juice and lemon zest to the egg and sugar mixture, stirring until well combined.
  • Sift the wheat flour, baking powder and salt over the liquid mixture. Mix gently until the ingredients are just combined. Do not mix too much to avoid hardening the cake.
  • Pour the batter into the prepared pan and place in the preheated oven.
  • Bake for approximately 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Remove from the oven and let it cool in the pan for a few minutes before unmolding.
  • Once completely cooled, you can sprinkle powdered sugar on top or even make a lemon glaze if desired.
