3 eggs
1 cup of sugar
1/2 cup vegetable oil
1/2 cup fresh lemon juice
1 tablespoon lemon zest
1 and 1/2 cups of wheat flour
1 teaspoon of baking powder

- Preheat the oven to 180°C. Grease and flour a cake pan.
- In a large bowl, beat the eggs with the sugar until you obtain a creamy mixture.
- Add the oil, lemon juice and lemon zest to the egg and sugar mixture, stirring until well combined.
- Sift the wheat flour, baking powder and salt over the liquid mixture. Mix gently until the ingredients are just combined. Do not mix too much to avoid hardening the cake.
- Pour the batter into the prepared pan and place in the preheated oven.
