Ingredients

  • 3 eggs

  • 2 cups of cassava flour

  • 1 small onion chopped

  • 2 cloves of garlic, chopped

  • 3 tablespoons butter or vegetable oil

  • Salt to taste

  • Black pepper to taste (optional)

  • Chopped green chili to taste (optional)

Directions

  • In a frying pan, melt 1 tablespoon of butter or heat a little vegetable oil. Crack the eggs into the pan and stir gently until they are cooked, forming small pieces. Remove from pan and set aside.
  • In the same frying pan, add the remaining butter or oil and sauté the onion and garlic until golden.
  • When the onion and garlic are golden, add the cassava flour to the pan. Stir well so that the flour absorbs the fat and becomes slightly golden.
  • Add the boiled eggs to the pan with the sautéed cassava flour. Mix well until the eggs are evenly distributed throughout the crumbs.
  • Season with salt and black pepper to taste. If desired, add chopped green scent to give a touch of freshness.
  • Serve the hot egg farofa as an accompaniment to main dishes, such as beans, meat or chicken.
