Ingredients
2 cups cold, cooked rice (preferably day-old)
1 lb shrimp, peeled and deveined
2 eggs, lightly beaten
1 cup mixed vegetables (such as peas, carrots, and corn)
1/2 cup diced onion
2 cloves garlic, minced
2–3 tablespoons soy sauce
1 tablespoon oyster sauce (optional)
2–3 tablespoons vegetable or sesame oil
Salt and pepper, to taste
Sliced green onions, for garnish
Sesame seeds, for garnish
Directions
- Ensure the rice is cold to prevent clumping during frying. Season the shrimp lightly with salt and pepper. If using frozen vegetables, thaw them beforehand.
- Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the shrimp and stir-fry for 2–3 minutes per side until they turn pink and are just cooked through. Remove the shrimp from the pan and set aside.
- In the same pan, add a little more oil if needed. Pour in the beaten eggs and cook, stirring gently, until they are softly scrambled. Transfer the eggs to a bowl with the shrimp.
- Add the diced onions and minced garlic to the pan. Sauté for about 1–2 minutes until the onions become translucent and the garlic is fragrant. Toss in the mixed vegetables and stir-fry for another minute.
- Add the cold rice to the pan, breaking up any clumps with your spatula. Stir-fry for about 2 minutes until the rice is heated through. Return the shrimp and scrambled eggs to the pan. Drizzle in the soy sauce (and oyster sauce, if using), and mix well. Taste and adjust the seasoning with salt and pepper as needed.
- Once everything is thoroughly heated and evenly coated with the sauce, remove the pan from the heat. Garnish with sliced green onions and a sprinkle of sesame seeds. Serve hot and enjoy!
