3 firm ripe bananas
1 tablespoon lemon juice
1 tablespoon coconut oil or vegetable oil

Directions
- Peel the bananas and slice them very thin (about 2–3 mm thick) using a knife or mandoline.
- Toss the banana slices gently with lemon juice to keep them from turning brown.
- Heat the coconut oil in a frying pan over medium heat.
- Place banana slices in a single layer in the pan. Cook for about 2–3 minutes per side until golden and crispy.
- Transfer chips to a paper towel to remove excess oil. Sprinkle lightly with salt if desired.
