This Mediterranean salad is a healthy and tasty option that’s quick, simple, and easy to prepare.

Ingredients

  • 1 tomato, diced

  • 1/2 red onion, diced

  • 1/2 seedless cucumber, cut into cubes

  • 1 cup Minas cheese, cut into cubes

  • 1 tablespoon chopped fresh mint

  • 8 black olives, chopped

  • Lemon juice, to taste

  • Olive oil, to taste

  • Salt, to taste

Directions
