Ingredients
- Dough
4 eggs
100 grams of grated coconut
200 ml of coconut milk
500 grams of cassava
1 can of condensed milk (395 grams)
1 pinch of salt
- Syrup
1/2 cup (tea) of water
1 cup (tea) of sugar
Directions
- Add the eggs, coconut milk, condensed milk, salt to the blender and beat for 1 minute.Â
Add the peeled and chopped cassava and beat again.Â
Add the grated coconut, beat a little more and book. - In a pan over medium heat, add the sugar and mix until it melts and forms a caramelized syrup.Â
Add the water and let it cook for about 5 minutes, until the sugar melts again.Â
Pour the syrup into a mold and then pour over the dough. - Place the pudding mold inside a larger baking dish filled halfway with hot water and place in a preheated oven at 180º₢ to bake in a bain-marie for approximately 40 to 50 minutes, or until a toothpick comes out clean when skewered.
- Carefully remove the cake from the oven and allow it to cool at room temperature.Â
Unmold the dessert onto a platter or plate and the manioc bombocado is ready to be served.
