Quick and Easy Sauteed Eggplant

Ingredients
4 tablespoons of tomato sauce
2 chopped eggplants
1 teaspoon (coffee) dried seasoning
1 teaspoon (coffee) of oregano
1 clove of minced garlic
1 chopped tomato
1/2 chopped onion
Tomato sauce to taste
Oregano to taste
Olive oil to taste
Salt to taste
Directions
- Soak the chopped eggplants in salted water for 20 minutes.Â
In a pan put some olive oil and lead to low fire, add the chopped onion and sauté without stopping stirring until it withers.Â
Add the minced garlic, the drained eggplant and stir well. - Add the diced tomato, the dehydrated seasoning, the oregano and salt to taste.Â
Keep stirring while cooking for a few more minutes.Â
Add the tomato sauce, mix again and cover the pan.Â
Cook over low heat for another 6 to 8 minutes, stirring occasionally.Â
Transfer to a refractory and the braised eggplant is ready.
