2 medium potatoes
4 whole eggs
Sliced bacon to taste
Black pepper to taste
Fresh parsley to taste
Olive oil to taste

Directions
- Fry the bacon slices in a skillet on both sides until golden brown.
Remove them from the skillet and reserve. - Add a little olive oil to the same skillet.
Slice the peeled potatoes and season with black pepper and salt to taste. - Fry the potatoes until cooked, stirring constantly.
Beat the eggs well and transfer to the skillet. - Add the bacon slices, cover the skillet and cook over low heat until the omelette is firm and consistent.
