Ingredients
2 cooked and shredded chicken breasts
1 chopped onion
2 minced garlic cloves
1 tablespoon butter or margarine
1 can of green corn
1 can of peas
1 cup of tomato sauce
1/2 cup of water
1/2 cup of milk
1 can of cream
200g grated mozzarella cheese
Salt and pepper to taste
Straw potato to decorate
Directions
- In a large saucepan, heat the butter or margarine over medium heat.Â
Add the onion and garlic and sautĂ© until golden. - Add the shredded chicken to the pan and season with salt and pepper to taste.Â
Stir well to mix the seasonings. - Add the green corn, the pea, the tomato sauce and the water.Â
Stir again and cook for about 5 minutes. - Then add the milk and cream to the pan.Â
Mix well to incorporate the ingredients. - Let the fricassee cook over low heat for approximately 10 minutes, stirring occasionally.
- Preheat the oven to 180°C.
- Transfer the fricassĂȘ ââto a refractory or roasting pan.Â
Cover the surface with grated mozzarella cheese. - Place in the preheated oven for about 15 to 20 minutes, or until the cheese is melted and golden.
- Remove from the oven and serve the chicken fricassĂȘ ââstill warm, accompanied by straw potatoes to decorate.
