Ingredients

  • 2 cooked and shredded chicken breasts

  • 1 chopped onion

  • 2 minced garlic cloves

  • 1 tablespoon butter or margarine

  • 1 can of green corn

  • 1 can of peas

  • 1 cup of tomato sauce

  • 1/2 cup of water

  • 1/2 cup of milk

  • 1 can of cream

  • 200g grated mozzarella cheese

  • Salt and pepper to taste

  • Straw potato to decorate

Directions

  • In a large saucepan, heat the butter or margarine over medium heat. 
    Add the onion and garlic and sauté until golden.
  • Add the shredded chicken to the pan and season with salt and pepper to taste. 
    Stir well to mix the seasonings.
  • Add the green corn, the pea, the tomato sauce and the water. 
    Stir again and cook for about 5 minutes.
  • Then add the milk and cream to the pan. 
    Mix well to incorporate the ingredients.
  • Let the fricassee cook over low heat for approximately 10 minutes, stirring occasionally.
  • Preheat the oven to 180°C.
  • Transfer the fricassĂȘ ​​to a refractory or roasting pan. 
    Cover the surface with grated mozzarella cheese.
  • Place in the preheated oven for about 15 to 20 minutes, or until the cheese is melted and golden.
  • Remove from the oven and serve the chicken fricassĂȘ ​​still warm, accompanied by straw potatoes to decorate.
