Ingredients
2 cups sweet corn (can be fresh, frozen or canned)
1 cup wheat flour
1 cup of sugar
1/2 cup of milk
1/4 cup vegetable oil
3 eggs
1 tablespoon powdered yeast
A bit of salt
Directions
- Preheat the oven to 180°C and grease a cake tin with butter or oil.
- In the blender, add the green corn, milk, vegetable oil and eggs.Â
Mix until you get a smooth mixture. - In a separate bowl, mix the wheat flour, sugar and salt.
- Pour the blender mixture into the bowl with the dry ingredients.Â
Stir well until everything is incorporated. - Add the baking powder and stir again, just enough to evenly distribute it in the dough.
- Pour the dough into the greased cake tin.
- Place in the preheated oven and bake for approximately 40 minutes, or until a toothpick inserted in the center of the cake comes out clean.
- Remove the cake from the oven and let it cool slightly before unmolding.
- Serve cornbread at room temperature or cold.Â
