Ingredients

  • 2 cups sweet corn (can be fresh, frozen or canned)

  • 1 cup wheat flour

  • 1 cup of sugar

  • 1/2 cup of milk

  • 1/4 cup vegetable oil

  • 3 eggs

  • 1 tablespoon powdered yeast

  • A bit of salt

Directions

  • Preheat the oven to 180°C and grease a cake tin with butter or oil.
  • In the blender, add the green corn, milk, vegetable oil and eggs. 
    Mix until you get a smooth mixture.
  • In a separate bowl, mix the wheat flour, sugar and salt.
  • Pour the blender mixture into the bowl with the dry ingredients. 
    Stir well until everything is incorporated.
  • Add the baking powder and stir again, just enough to evenly distribute it in the dough.
  • Pour the dough into the greased cake tin.
  • Place in the preheated oven and bake for approximately 40 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  • Remove the cake from the oven and let it cool slightly before unmolding.
  • Serve cornbread at room temperature or cold. 
    You can sprinkle icing sugar on top if desired.
