Ingredients
500g of fish (can be dogfish, sea bass, dorado, boyfriend, painted, among others), cut into slices or fillets
Juice of 2 lemons
Salt to taste
Black pepper to taste
2 tablespoons of palm oil
2 tablespoons of olive oil
1 large onion, cut into rings
3 garlic cloves, minced
1 green bell pepper, cut into strips
1 red bell pepper, cut into strips
2 medium tomatoes, seeded and sliced
1 small glass of coconut milk (200ml)
Fresh cilantro to taste, chopped
1 chili pepper, minced (optional, if you want a spicy touch)
Directions
- Season the fish with lemon juice, salt and black pepper.
Let it rest for about 15 to 20 minutes. - In a large pan, heat the palm oil and olive oil over medium heat.
- Add the onion and garlic and sauté for a few minutes until soft and golden.
- Add the peppers and sauté for a few more minutes, until they begin to soften.
- Add the tomatoes and sauté for a few more minutes until they start to break down.
- Place the fish slices on top of the vegetables in the pan, being careful not to break them.
Pour the coconut milk over the fish. - Add chopped cilantro and chopped chili pepper (if using).
Hit the salt if necessary. - Cover the pan and cook over low heat for about 15 to 20 minutes, or until the fish is cooked through and tender.
- After cooking time, check seasoning and adjust if necessary.
- Serve the moqueca hot, accompanied by white rice and farofa.
You can also add pickled chili peppers and cooked shrimp to enrich the recipe even more.
