Ingredients

  • 4 large potatoes

  • 1 tablespoon olive oil

  • salt to taste

  • pepper to taste

  • 1 cup grated mozzarella cheese

  • 1/2 cup cooked and chopped bacon

  • 1/4 cup chopped chives

  • 1/2 cup sour cream

Directions

  • Preheat the oven to 200°C.
  • Wash the potatoes well and dry them with a paper towel. 
    Then poke a few holes with a fork in each potato to allow steam to escape during cooking.
  • In a small bowl, mix olive oil, salt and pepper. 
    Rub this mixture over the potatoes, covering them completely.
  • Place the potatoes directly on the oven rack or on a baking sheet and bake for about 1 hour, or until they are tender when pierced with a fork.
  • Remove the potatoes from the oven and allow them to cool slightly to make them easier to handle.
  • Cut a thin slice at the top of each potato and, with the help of a spoon, carefully remove the core, leaving a thin edge to maintain the shape of the potato. 
    Book the core.
  • In a bowl, mix the potato core with the grated mozzarella cheese, the cooked and chopped bacon, the chopped chives and the cream. 
    Season with salt and pepper to taste.
  • Stuff each potato with the prepared mixture, pressing well so that they are well filled.
  • Place the stuffed potatoes back in the oven and bake for another 10 to 15 minutes, or until the cheese is melted and the tops of the potatoes are lightly browned.
  • Remove from oven and let cool for a few minutes before serving.
