  • 2 tablespoons of vegetable oil

  • 2 minced garlic cloves

  • 1 tablespoon cornstarch (cornstarch) dissolved in 1/4 cup water

  • Salt and pepper to taste

  • Sesame oil (optional) to finish

Directions

  • In a bowl, season the chicken cubes with 2 tablespoons of soy sauce, salt and pepper to taste.
Let it marinate for about 15-20 minutes.
  • In a large skillet or wok, heat 1 tablespoon vegetable oil over medium-high heat.
Add the marinated chicken and stir-fry until cooked through and browned on all sides.
Remove the chicken from the skillet and set aside.
  • In the same skillet, add 1 more tablespoon of vegetable oil, if needed.
Add chopped onion, chopped garlic and sauté until soft and lightly browned.
  • Add the bell peppers, carrots and sliced mushrooms to the skillet.
Sauté for a few minutes until the vegetables are slightly soft but still crunchy.
  • In a small bowl, mix 1 tablespoon of soy sauce with the cornstarch dissolved in water.
