Ingredients
8 eggs
1 cup of milk
1 cup shredded cheese (you can use cheddar cheese, Swiss cheese, mozzarella cheese, or your choice)
1 cup chopped ham or bacon (optional)
1 cup chopped vegetables (e.g. peppers, onions, tomatoes, spinach, mushrooms, etc.)
Salt and pepper to taste
2 tablespoons of butter or olive oil
Fresh or dried herbs to taste (e.g. parsley, chives, basil)
Directions
- Preheat the oven to 180°C.Â
While the oven is heating, place the butter or olive oil in a large, ovenproof skillet and place over medium heat to melt.Â
If you don’t have a frying pan that can go in the oven, you can use a greased ovenproof pan. - While the butter or olive oil is melting, beat the eggs and milk in a large bowl.Â
Season with salt, pepper and herbs to taste. - When the butter is melted and hot, add the chopped vegetables to the pan and cook for a few minutes until they start to soften.
- If you are using ham or bacon, add it to the skillet and cook for a few more minutes until golden.
- Pour the beaten egg mixture over the ingredients in the skillet.Â
Sprinkle the grated cheese on top. - Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the omelet is completely cooked and lightly browned on top.
- Carefully remove the pan from the oven (the handle will be hot) and let the omelet rest for a few minutes before cutting into slices.
- Serve the oven-baked omelet hot, cut into wedges and garnished with fresh herbs, if desired.
