Ingredients

  • 2 cups of cold, cooked rice

  • 200g diced bacon

  • 2 eggs

  • 1/2 chopped onion

  • 2 tablespoons of butter

  • 1/2 cup chopped parsley

  • 1/2 cup straw potatoes

  • Salt and pepper to taste

Directions

  • In a large frying pan, fry the diced bacon until it is golden and crispy. 
    Remove the bacon from the pan with a slotted spoon and set aside.
  • In the same frying pan where you fried the bacon, add the chopped onion and sauté until it becomes translucent.
  • Crack the eggs into the pan with the onion and stir quickly to make scrambled eggs.
  • Add the butter and cooked rice to the skillet. 
    Mix well, ensuring that the rice is well coated with the eggs and onion.
  • Season with salt and pepper to taste.
  • Add the fried bacon back to the pan and mix.
  • Add the chopped parsley and stir again to incorporate all the ingredients.
  • When the rice is heated and well mixed, remove the skillet from the heat.
  • Serve Biro-Biro Rice on individual plates and top with straw potatoes.
  • Serve immediately and enjoy!
