Ingredients

  • 2 boneless, skinless chicken breasts, cut into cubes

  • 1 medium onion, chopped

  • 2 garlic cloves, chopped

  • 2 carrots, peeled and chopped

  • 2 celery stalks, chopped

  • 1/2 cup corn (can be canned or frozen)

  • 1/2 cup peas (can be canned or frozen)

  • 1/4 cup butter

  • 1/4 cup of wheat flour

  • 4 cups of chicken broth

  • 1 cup of milk

  • Salt and pepper to taste

  • 1 teaspoon herb seasoning (such as thyme, basil or parsley, optional)

  • Cookies or bread to accompany (optional)

Directions

  • In a large pan, melt the butter over medium heat. 
    Add the chopped onion, garlic, carrots and celery. 
    Cook for about 5 minutes, or until the vegetables are soft.
  • Add the chicken cubes to the pan and cook until golden on the outside, stirring occasionally. 
    This should take about 5 minutes.
  • Sprinkle the flour over the chicken and vegetable mixture, stirring well to combine. 
    Cook for another 2-3 minutes to eliminate the raw flour flavor.
  • Gradually add the chicken broth, stirring constantly to prevent lumps from forming. 
    Continue to stir until the mixture begins to thicken.
  • Reduce heat to medium-low and add milk, corn and peas. 
    Let the cream of chicken cook for another 10-15 minutes, stirring occasionally, until everything is heated through and the vegetables are tender.
  • Season the cream of chicken soup with salt, pepper and herb seasoning, if using. 
    Adjust the seasonings according to your taste.
  • Serve the cream of chicken hot, accompanied by crackers or bread, if desired.
