Ingredients
1 cup corn couscous
2 cups of milk
1/2 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla essence (optional)
Cinnamon powder (optional, for sprinkling)
Water (to hydrate the couscous)
Fresh fruit (such as banana, strawberries or kiwi) for garnish
Directions
- Start by hydrating the corn couscous.
Place the couscous in a bowl and add enough water to cover it.
Let it rest for about 10 minutes or until the couscous has absorbed the water and is soft. - While the couscous is hydrating, put the milk in a pan and place over medium heat.
Add sugar, salt and vanilla extract (if using).
Stir well until the sugar is completely dissolved. - When the couscous is ready, drain the excess water and add it to the pan with the sweetened milk.
Cook over medium-low heat, stirring constantly, until the couscous has absorbed the milk and the mixture has thickened.
This should take about 5-7 minutes. - Remove the pan from the heat and let the sweet couscous cool slightly.
- Transfer the sweet couscous to individual bowls or a large bowl.
Cool completely in the refrigerator for at least 1 hour. - When serving, sprinkle a little cinnamon powder on top and decorate with fresh cut fruit, such as banana, strawberries or kiwi.
- Serve the sweet couscous chilled.
You can also add other ingredients, such as shredded coconut or chopped nuts, for more flavor and texture.
