Ingredients

  • 2 tablespoons olive oil

  • 1 medium onion, chopped

  • 2 garlic cloves, chopped

  • 800g ripe tomatoes, skinned and seedless (you can use canned tomatoes if you prefer)

  • 1 teaspoon of sugar (optional, to balance the acidity)

  • Salt and pepper to taste

  • 1 bay leaf (optional)

  • A few fresh basil leaves (optional)

Directions

  • In a large pan, heat the olive oil over medium heat.
  • Add the chopped onion and garlic and sauté for a few minutes until they become soft and translucent.
  • If you are using fresh tomatoes, make an “X” shaped cut in the bottom of each tomato and dip them in boiling water for a few minutes. 
    This will make it easier to remove the skin. 
    Then remove the skin, cut the tomatoes in half and remove the seeds.
  • Chop the tomatoes into small pieces and add them to the pan with the onion and garlic.
  • Add sugar, salt, pepper and bay leaf (if using).
  • Let the tomato sauce cook over low heat for about 30 to 40 minutes, stirring occasionally. 
    Cooking time may vary depending on desired consistency. 
    If you like your sauce thicker, cook longer.
  • If using basil leaves, add them to the sauce in the last few minutes of cooking.
  • Remove the bay leaf (if used) and adjust the seasoning with salt and pepper, if necessary.
  • If you prefer a smoother tomato sauce, you can use a hand blender or a regular blender to process the sauce until it reaches the desired consistency.
