Ingredients
1 cup cornmeal (corn flour)
4 cups of water
1 tablespoon of butter
1/2 cup grated parmesan cheese
Salt to taste
Black pepper to taste
Directions
- In a large pot, bring 4 cups of water to a boil.
- While the water is heating, in a separate bowl, mix the cornmeal with about 1 cup of cold water, forming a lump-free liquid mixture.
- When the water in the pan is boiling, add salt to taste.Â
Remember that polenta needs to be well seasoned, so don’t skimp on the salt. - With the water boiling, slowly pour the cornmeal mixture into the pan, stirring constantly with a whisk or wooden spoon to prevent lumps from forming.
- Reduce the heat to medium-low and continue stirring the polenta.Â
The polenta will start to thicken as it cooks.Â
This may take 20 to 30 minutes. - When the polenta is very thick and slides easily off the spoon, add the butter and grated Parmesan cheese.Â
