Stuffed Zucchini

Ingredients
4 medium zucchini
1 medium onion, chopped
2 garlic cloves, chopped
1 tablespoon olive oil
500g ground meat (can be beef, chicken or turkey)
1 cup cooked rice
1 can of peeled tomatoes (or tomato sauce)
Salt and pepper to taste
1 teaspoon Italian seasoning (optional)
Grated cheese for sprinkling (optional)
Chopped fresh parsley for garnish
Directions
- Preheat the oven to 180°C.
- Wash the zucchini and cut them in half lengthwise.
With a spoon, remove the core of the zucchini, forming “boats”.
Reserve the removed core. - In a pan, heat the olive oil and sauté the onion and garlic until golden.
- Add the ground beef to the pan and cook until it is completely browned.
- Chop the reserved zucchini core and add it to the pan along with the meat.
Cook for a few more minutes. - Add the cooked rice and peeled tomatoes (or tomato sauce) to the mixture in the pan.
Season with salt, pepper and Italian seasoning, if using.
Cook for another 5-7 minutes, stirring occasionally. - Place the zucchini halves on a baking tray and fill each one with the prepared mixture.
- If desired, sprinkle grated cheese over the stuffed zucchini.
- Bake for approximately 25-30 minutes, or until the zucchini are soft.
- Remove from the oven and garnish with fresh parsley before serving.
