Ingredients

  • 4 medium zucchini

  • 1 medium onion, chopped

  • 2 garlic cloves, chopped

  • 1 tablespoon olive oil

  • 500g ground meat (can be beef, chicken or turkey)

  • 1 cup cooked rice

  • 1 can of peeled tomatoes (or tomato sauce)

  • Salt and pepper to taste

  • 1 teaspoon Italian seasoning (optional)

  • Grated cheese for sprinkling (optional)

  • Chopped fresh parsley for garnish

Directions

  • Preheat the oven to 180°C.
  • Wash the zucchini and cut them in half lengthwise. 
    With a spoon, remove the core of the zucchini, forming “boats”. 
    Reserve the removed core.
  • In a pan, heat the olive oil and sauté the onion and garlic until golden.
  • Add the ground beef to the pan and cook until it is completely browned.
  • Chop the reserved zucchini core and add it to the pan along with the meat. 
    Cook for a few more minutes.
  • Add the cooked rice and peeled tomatoes (or tomato sauce) to the mixture in the pan. 
    Season with salt, pepper and Italian seasoning, if using. 
    Cook for another 5-7 minutes, stirring occasionally.
  • Place the zucchini halves on a baking tray and fill each one with the prepared mixture.
  • If desired, sprinkle grated cheese over the stuffed zucchini.
  • Bake for approximately 25-30 minutes, or until the zucchini are soft.
  • Remove from the oven and garnish with fresh parsley before serving.
