Ingredients

  • 2 cups of wheat flour

  • 1/2 cup cold butter, cut into cubes

  • 1/4 cup ice water

  • A bit of salt

  • 2 medium zucchini, cut into cubes

  • 1 large carrot, grated

  • 1 red pepper, chopped

  • 1 medium onion, chopped

  • 2 garlic cloves, chopped

  • 1 cup broccoli, cut into small florets

  • 1 cup cheese (mozzarella, cheddar or other cheese of your choice), grated

  • 4 eggs

  • 1 cup of milk

  • Salt and pepper to taste

  • A handful of fresh parsley, chopped (optional)

Directions

  • In a large bowl, mix the wheat flour and salt.
  • Add the cold butter and mix until it forms a crumb-like texture.
  • Add the ice water little by little, mixing until it forms a homogeneous dough.
  • Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  • Preheat the oven to 180°C.
  • In a frying pan, sauté the onion and garlic until they are golden.
  • Add the vegetables (zucchini, carrots, peppers, broccoli) and cook until they are tender but still crunchy.
  • Season with salt and pepper to taste. 
    Add the parsley, if using.
  • Roll out the dough on a floured surface and line the bottom of a pie dish.
  • Spread the sautéed vegetables over the dough.
  • Sprinkle the grated cheese over the vegetables.
  • In a separate bowl, beat the eggs and mix with the milk. 
    Pour this mixture over the vegetables and cheese.
  • Bake the pie in the preheated oven for approximately 30-40 minutes, or until the pastry is golden and the filling is firm.
  • Remove from the oven and let cool slightly before slicing.
