Ingredients

  • 1 head of garlic (approximately 10-12 cloves)

  • 1 tablespoon olive oil

  • 1 tablespoon of butter

  • 1 medium onion, chopped

  • 2 medium potatoes, peeled and cut into cubes

  • 4 cups chicken or vegetable broth

  • 1 cup of cream

  • Salt and pepper to taste

  • Chopped parsley for garnish (optional)

Directions

  • Preheat the oven to 200°C.
  • Cut off the top of the garlic head to expose the cloves.
  • Place the head of garlic on a sheet of aluminum foil, drizzle with a little olive oil and wrap.
  • Bake in the oven for about 30-40 minutes, or until the garlic cloves are soft and golden. 
    Let it cool a little.
  • In a large pan, heat the olive oil and butter over medium heat.
  • Add the chopped onion and sauté until it becomes transparent.
  • Add the diced potatoes and roasted garlic cloves (squeeze the garlic cloves to extract the pulp).
  • Pour chicken or vegetable broth into the pan. 
    Bring to a boil, then reduce heat and simmer until potatoes are tender.
  • Use a blender or mixer to puree the soup until it reaches a creamy consistency.
  • Return the soup to the pan over low heat and add the cream, stirring well.
  • Season with salt and pepper to taste.
  • Heat the garlic cream until ready to serve.
