Ingredients
2 cups of arborio rice
1 medium onion, finely chopped
2 garlic cloves, chopped
1/2 cup dry white wine
4 cups vegetable broth (approximately), kept warm
2 cups cheese (can be a mix of cheeses such as parmesan, gouda, and gruyère), grated
2 tablespoons of butter
Salt to taste
Ground black pepper to taste
Chopped fresh parsley for garnish
Directions
- In a large pan, heat some olive oil over medium heat.
Add the onion and garlic, sautéing until they become transparent. - Add the arborio rice to the pan and stir well so that the rice is coated in the onion and garlic mixture.
- Pour the white wine into the pan and stir until the liquid has been absorbed by the rice.
- Start adding the vegetable broth, one ladle at a time, stirring constantly.
Continue adding the broth and stirring until the rice is cooked al dente. - When the rice is almost ready, add the grated cheese and stir well until it is completely melted and incorporated into the risotto.
- Add the butter and stir until the risotto is creamy.
Season with salt and pepper to taste. - Serve the risotto on individual plates, sprinkling with fresh chopped parsley on top.
