1 and 1/4 cup of wheat flour
1/2 cup cold butter, cut into cubes
1/4 teaspoon salt
3 to 4 tablespoons of ice water
2 medium leeks, sliced
2 tablespoons of butter
1 cup Gruyère or Swiss cheese, grated
4 eggs
1 cup of cream
Salt and pepper to taste
Nutmeg to taste
Directions
- In a large bowl, mix the wheat flour and salt.
- Add the cold butter cut into cubes.Â
Use a pastry cutter or your fingers to incorporate the butter until the mixture resembles coarse crumbs. - Add the ice water, one tablespoon at a time, until the dough starts to come together.
- Form the dough into a ball, cover it with plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 180°C.
