Ingredients
500g of meat for the pan (can be muscle, chuck, soft drumstick, etc.), cut into medium pieces
4 medium potatoes, peeled and cut into thick slices
1 medium onion, chopped
3 garlic cloves, chopped
2 ripe tomatoes, chopped
2 carrots, cut into slices (optional)
2 bay leaves
1 tablespoon of oil or olive oil
1 tablespoon paprika (or sweet paprika)
Salt and pepper to taste

Directions
- In a large pan, heat the oil or olive oil over medium heat.
- Add the meat cut into pieces and brown on all sides.
- Add the chopped onion and garlic.
Sauté until the onion becomes transparent. - Add the chopped tomatoes, bay leaves, paprika, salt and pepper to taste.
Stir well to incorporate the seasonings. - If using carrots, add them now.
- Bring to a boil, then reduce heat to medium-low and cover the pan.
Cook for about 1 hour or until the meat is tender, stirring occasionally. - Add the sliced potatoes and continue cooking until the potatoes are soft and the sauce has thickened.
- Adjust salt and pepper if necessary.
- Remove bay leaves before serving.
