Ingredients

  • 2 cups of tapioca flakes

  • 2 cups of coconut milk

  • 1 cup of milk

  • 1 cup of sugar

  • 1/2 cup grated coconut (optional)

  • 4 eggs

  • 1 tablespoon butter (melted)

  • 1 tablespoon baking powder

Directions

  • Preheat the oven to 180°C. 
    Grease a cake pan with butter and sprinkle with tapioca flakes to prevent it from sticking.

    In a large bowl, mix the tapioca flakes, coconut milk, milk, sugar and grated coconut (if using). 
    Let this mixture rest for about 30 minutes, so that the flake absorbs the liquids.
  • While the mixture rests, separate the egg yolks from the egg whites. 
    Beat the egg whites until firm peaks form.
  • Add the egg yolks to the flake mixture and mix well. 
    Then add the melted butter and baking powder, mixing until you obtain a homogeneous dough.
  • Gently incorporate the egg whites into the batter, making gentle movements from bottom to top to maintain the lightness of the cake.
  • Pour the batter into the prepared pan and bake in the preheated oven for approximately 40-45 minutes, or until the cake is golden brown and firm to the touch.
  • Let the cake cool before unmolding. 
    If desired, sprinkle grated coconut on top before serving.
