Ingredients
1 cup of rolled oats
1 cup of milk (can be cow’s milk, vegetable milk, such as almond, soy, etc.)
1 egg
1 tablespoon honey or maple syrup (optional, to sweeten)
1 teaspoon of baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract (optional)
Oil or butter to grease the pan
Directions
- In a blender, mix the oats and milk until you obtain a homogeneous mixture.
- Add the egg, honey (if using), baking powder, salt and vanilla extract to the blender.
Blend until all ingredients are well combined. - Let the dough rest for a few minutes so the oats absorb the liquid and the mixture thickens a little.
- Heat a frying pan over medium heat and grease with oil or butter.
- Pour about 1/4 cup of the batter into the heated skillet.
Cook until bubbles start to form on the surface of the pancake and the edges start to turn golden. - Flip the pancake and cook the other side until golden.
- Repeat the process with the rest of the dough.
- Serve the pancakes hot, accompanied by fresh fruit, maple syrup, yogurt or other ingredients of your choice.
