Fluffy Carrot Cake in a Blender

Ingredients
3 medium carrots, peeled and chopped
4 eggs
1 cup vegetable oil
2 cups of sugar
2 cups of wheat flour
1 tablespoon baking powder
1/2 cup chocolate powder
1/4 cup sugar
1/4 cup of milk
2 tablespoons of butter
Directions
- Preheat the oven to 180°C.
Grease a medium pan with margarine and wheat flour. - In a blender, place the chopped carrots, eggs, oil and sugar.
- Beat well until you get a homogeneous mixture.
- In a separate bowl, sift the wheat flour.
- Pour the liquid mixture from the blender into the bowl with the sifted wheat flour.
- Mix well until you obtain a homogeneous dough.
- Add the baking powder to the dough and mix gently.
- Pour the batter into the prepared pan.
- Bake in the preheated oven for approximately 40-50 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the frosting.
- In a pan, mix the chocolate powder, sugar, milk and butter.
- Cook over medium heat, stirring constantly, until you reach a creamy consistency.
- Once the cake is baked and still hot, pour the frosting over it.
- Let the cake cool slightly before cutting into pieces and serving.
