2 medium eggplants
2 ripe tomatoes
1 onion
2 garlic cloves
Extra virgin olive oil
Salt and pepper to taste
Fresh herbs (such as basil or oregano) or dried to taste
Sliced or grated mozzarella cheese
Sliced black olives
Directions
- Preheat the oven to 200°C.
- Wash the eggplants well and cut them into medium slices.
- Place the eggplant slices in a colander, sprinkle salt over them and let them rest for about 15 minutes.
This will help eliminate excess moisture and bitterness from the eggplant. - While the eggplants are resting, chop the tomatoes, onion and garlic cloves.
- After 15 minutes, rinse the eggplant slices to remove the salt and dry them with paper towels.
- In a baking dish, distribute the eggplant, tomato, onion and garlic slices.
Drizzle with olive oil. - Season with salt, pepper, and herbs of your choice.
- Add slices of mozzarella cheese on top of the eggplants.
- Spread the sliced olives over the cheese.
- Bake for about 25-30 minutes, or until the eggplants are soft, the cheese is melted and golden.
- Remove from the oven and serve hot.
You can garnish with more fresh herbs before serving.
