Ingredients

  • 2 cooked and shredded chicken breasts

  • 1 can of green corn (or frozen, cooked corn)

  • 1 can of peas (or frozen peas, cooked)

  • 1 grated carrot

  • 1 green apple chopped into cubes

  • 1 cup raisins (optional)

  • 1 cup mayonnaise

  • 1/2 cup of cream

  • 1 tablespoon mustard

  • 1 lemon juice

  • Salt and pepper to taste

  • Straw potato (to decorate)

Directions

  • In a large bowl, mix the shredded chicken, corn, peas, grated carrot, chopped apple and raisins (if using).
  • In another bowl, make the sauce by mixing the mayonnaise, cream, mustard, lemon juice, salt and pepper. 
    Stir well until you obtain a homogeneous mixture.
  • Pour the dressing over the ingredients in the large bowl and mix gently until all the ingredients are well incorporated.
  • Taste and adjust seasoning as needed.
  • Refrigerate for at least 30 minutes before serving to let the flavors blend.
  • When serving, decorate with straw potatoes on top.
