Ingredients
2 cups of cooked rice
1 can of drained green corn
1 can of drained peas
1 grated carrot
1 cup chopped ham
1 cup grated mozzarella cheese
1/2 cup grated parmesan cheese
1/2 cup chopped green or black olives (optional)
2 beaten eggs
1/2 cup of milk
1/4 cup melted butter
Salt and pepper to taste
Chopped green chili to taste
Directions
- Preheat the oven to 180°C.
- In a large bowl, mix the cooked rice, corn, peas, grated carrots, ham, mozzarella, parmesan and olives.
- In another bowl, mix the beaten eggs, milk, melted butter, salt and pepper.
- Pour the liquid mixture over the dry ingredients and mix well to ensure everything is evenly combined.
- Transfer the mixture to a greased baking dish.
- Bake in the preheated oven for about 25-30 minutes or until the top is golden brown.
- Remove from the oven, sprinkle with chopped green chillies and serve hot.
