Ingredients

  • 2 cups of cooked rice

  • 1 can of drained green corn

  • 1 can of drained peas

  • 1 grated carrot

  • 1 cup chopped ham

  • 1 cup grated mozzarella cheese

  • 1/2 cup grated parmesan cheese

  • 1/2 cup chopped green or black olives (optional)

  • 2 beaten eggs

  • 1/2 cup of milk

  • 1/4 cup melted butter

  • Salt and pepper to taste

  • Chopped green chili to taste

Directions

  • Preheat the oven to 180°C.
  • In a large bowl, mix the cooked rice, corn, peas, grated carrots, ham, mozzarella, parmesan and olives.
  • In another bowl, mix the beaten eggs, milk, melted butter, salt and pepper.
  • Pour the liquid mixture over the dry ingredients and mix well to ensure everything is evenly combined.
  • Transfer the mixture to a greased baking dish.
  • Bake in the preheated oven for about 25-30 minutes or until the top is golden brown.
  • Remove from the oven, sprinkle with chopped green chillies and serve hot.
