Ingredients

  • 500g of cleaned prawns

  • 1 green pepper, cut into slices

  • 1 red pepper, cut into slices

  • 1 medium onion, cut into slices

  • 3 cloves of garlic, chopped

  • 2 ripe tomatoes, skinned and chopped

  • 200ml coconut milk

  • 200ml fish stock (can be replaced with water)

  • 1 bunch of fresh coriander, chopped

  • 1 bunch of green onions, chopped

  • 1 lemon juice

  • Palm oil to taste

  • Olive oil

  • Salt and pepper to taste

Directions

  • In a large pan, heat some olive oil over medium heat.
  • Add the chopped onion and garlic and sauté until golden.
  • Add the peppers and continue sautéing for a few more minutes until they are soft.
  • Add the chopped tomatoes to the pan and cook until they break down and form a sauce.
  • Place the shrimp in the pan and stir well so that they are covered in the sauce.
  • Pour the coconut milk and fish stock into the pan. Season with salt and pepper to taste.
  • Leave the moqueca cooking over medium heat for about 15-20 minutes, until the shrimp are cooked.
  • Add the coriander, green onion and palm oil. Stir well to incorporate the flavors.
  • Finally, drizzle the moqueca with the lemon juice and adjust the seasoning as necessary.
  • Serve the shrimp moqueca accompanied by white rice or pirão.
