Ingredients
500g of cleaned prawns
1 green pepper, cut into slices
1 red pepper, cut into slices
1 medium onion, cut into slices
3 cloves of garlic, chopped
2 ripe tomatoes, skinned and chopped
200ml coconut milk
200ml fish stock (can be replaced with water)
1 bunch of fresh coriander, chopped
1 bunch of green onions, chopped
1 lemon juice
Palm oil to taste
Olive oil
Salt and pepper to taste
Directions
- In a large pan, heat some olive oil over medium heat.
- Add the chopped onion and garlic and sauté until golden.
- Add the peppers and continue sautéing for a few more minutes until they are soft.
- Add the chopped tomatoes to the pan and cook until they break down and form a sauce.
- Place the shrimp in the pan and stir well so that they are covered in the sauce.
- Pour the coconut milk and fish stock into the pan. Season with salt and pepper to taste.
- Leave the moqueca cooking over medium heat for about 15-20 minutes, until the shrimp are cooked.
- Add the coriander, green onion and palm oil. Stir well to incorporate the flavors.
- Finally, drizzle the moqueca with the lemon juice and adjust the seasoning as necessary.
- Serve the shrimp moqueca accompanied by white rice or pirão.
