Ingredients

  • 1 medium pineapple, peeled and diced

  • 1 cup of sugar

  • 1 can of condensed milk

  • 2 cans of milk (use the can of condensed milk as a measure)

  • 4 egg yolks

  • 2 tablespoons cornstarch

  • 1 teaspoon of vanilla essence

  • 1 package of champagne cookies

  • Grated coconut to decorate

Directions

  • In a pan, place the pineapple and sugar. 
    Cook over medium heat until the pineapple is soft and the syrup thickens a little. 
    Reserve.
  • In another pan, mix the condensed milk, milk, egg yolks and cornstarch. 
    Cook over medium heat, stirring constantly, until the cream thickens. 
    Remove from heat and add vanilla essence. 
    Let cool.
  • In a refractory, make alternating layers of champagne biscuits moistened in pineapple syrup, egg yolk cream and cooked pineapple. 
    Repeat the layers until the ingredients are finished, finishing with the cream.
  • Refrigerate for at least 4 hours or until the pavé is very cold and firm.
  • When serving, sprinkle grated coconut on top to decorate.
  • Serve chilled and enjoy!
