Ingredients
1 cup of cold milk
1 cup vegetable oil (can be sunflower, canola or corn oil)
1 small clove of garlic (optional, for flavor)
1 teaspoon Dijon mustard
Juice of half a lemon
Salt to taste
Directions
- Place the milk in a blender and add the garlic (if using).
- Turn the blender on low speed and add the oil in a steady stream.
Continue beating until the mixture begins to thicken. - When the mixture reaches a thicker consistency, add the mustard, lemon juice and salt.
Continue beating until you obtain a creamy and homogeneous texture. - Taste and adjust seasoning as needed, adding more salt, mustard or lemon to suit your personal taste.
- Transfer the milk mayonnaise to a container and refrigerate for at least 30 minutes before serving.
This helps to firm up the texture even more and intensify the flavors.
