1/2 cup tapioca flour
1 egg
Salt to taste
Filling to taste (cheese, ham, tomato, herbs, etc.)
Directions
- In a bowl, mix the tapioca flour and salt.
- Heat a non-stick frying pan over medium heat.
- Spread the tapioca flour evenly on the hot skillet, forming a thin layer.
- Let it cook for about 1-2 minutes, until the tapioca starts to come together and form a “pancake”.
- Meanwhile, beat the egg in a bowl and season with salt to taste.
- Pour the beaten egg over the tapioca in the pan.
- Let cook for another 2-3 minutes, until the egg is cooked.
- Add the filling of your choice over half of the tapioca with egg.
- Fold the tapioca in half, covering the filling, and press lightly to seal.
