Ingredients

  • 2 medium carrots, grated

  • 3 eggs

  • 1/2 cup coconut oil or sunflower oil

  • 1 cup oat flour or almond flour

  • 1/2 cup brown sugar or sweetener of your choice

  • 1 teaspoon of vanilla essence

  • 1 teaspoon of baking powder

  • Pinch of salt

Directions

  • Preheat the oven to 180°C and grease a cake tin with coconut oil or line with baking paper.
  • In a blender, add the grated carrots, eggs, coconut oil (or sunflower oil) and vanilla essence. Beat well until you get a homogeneous mixture.
  • In a large bowl, mix the oat flour (or almond flour), brown sugar (or sweetener of your choice), baking powder and a pinch of salt.
  • Pour the liquid mixture from the blender into the bowl of dry ingredients and stir until everything is well incorporated.
  • Pour the batter into the prepared pan and bake in the preheated oven for around 30-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Remove from the oven and let cool before unmolding and serving.
