Ingredients

  • 2 medium eggplants

  • 2 cups breadcrumbs

  • 1 cup wheat flour

  • 1 cup of milk

  • 2 eggs

  • Salt to taste

  • Frying oil

Directions

  • Cut the eggplants into thin slices and soak them in salted water for about 30 minutes to remove the bitterness.
  • On a plate, mix the breadcrumbs with a little salt.
  • In another dish, mix the wheat flour with a little salt.
  • In a third dish, beat the eggs with the milk.
  • Drain the eggplants and dry them with a clean dishtowel.
  • Pass the eggplant slices in the flour, then in the egg and milk mixture, and finally in the breadcrumbs.
  • Heat the oil in a skillet over medium heat and fry the eggplant slices until golden on both sides.
  • Drain excess oil on paper towels and serve while still hot.
