This baked cod recipe is an easy, healthy seafood option perfect for busy weeknights. Mild in taste and buttery in texture, it pairs beautifully with vegetables, rice, or a crisp salad.

Ingredients

  • 4 cod fillets (about 6 oz each)

  • 2 tablespoons olive oil or melted butter

  • 2 cloves garlic, minced

  • 1 lemon (zest and juice)

  • 1 teaspoon paprika

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 teaspoon dried parsley or Italian seasoning

  • Optional: fresh herbs (parsley or dill)

Directions

  • Preheat oven to 400°F (200°C).
  • Lightly grease a baking dish and place cod fillets in a single layer.
  • In a small bowl, mix olive oil, garlic, lemon juice, lemon zest, paprika, salt, pepper, and herbs.
  • Spoon the mixture evenly over the cod fillets.
