Ingredients

  • 1 ripe banana

  • 1 egg

  • 1/2 cup rolled oats (can be thin or thick rolled oats)

  • 1/2 teaspoon cinnamon powder (optional)

  • Pinch of salt (optional)

  • Coconut oil or butter to grease the pan

  • Honey, maple syrup or fresh fruit for serving (optional)

Directions

  • Peel the banana and mash it well in a bowl.
  • Add the egg to the mashed banana and mix until smooth.
  • Add the rolled oats to the banana and egg mixture. If desired, add ground cinnamon and a pinch of salt. Mix all ingredients well until a uniform dough forms.
  • Heat a non-stick frying pan over medium heat.
  • Lightly grease the skillet with coconut oil or butter.
  • Pour a portion of the batter into the hot skillet, using approximately 1/4 cup per pancake.
  • Cook for about 2-3 minutes, or until bubbles start to form on the surface of the pancake and the edges start to set.
  • Using a spatula, carefully flip the pancake and cook for another 1-2 minutes, or until golden and cooked through.
  • Repeat the process with the remaining dough, greasing the pan as needed.
