Ingredients
2 cups of cold, cooked rice
200g diced bacon
2 eggs
1/2 chopped onion
2 tablespoons of butter
1/2 cup chopped parsley
1/2 cup straw potatoes
Salt and pepper to taste
Directions
- In a large frying pan, fry the diced bacon until it is golden and crispy.
Remove the bacon from the pan with a slotted spoon and set aside. - In the same frying pan where you fried the bacon, add the chopped onion and sauté until it becomes translucent.
- Crack the eggs into the pan with the onion and stir quickly to make scrambled eggs.
- Add the butter and cooked rice to the skillet.
Mix well, ensuring that the rice is well coated with the eggs and onion. - Season with salt and pepper to taste.
- Add the fried bacon back to the pan and mix.
- Add the chopped parsley and stir again to incorporate all the ingredients.
- When the rice is heated and well mixed, remove the skillet from the heat.
- Serve Biro-Biro Rice on individual plates and top with straw potatoes.
- Serve immediately and enjoy!
