Ingredients

  • 4 cups fresh or frozen blueberries

  • 1/2 cup granulated sugar

  • 1 tbsp cornstarch

  • 1/2 tsp lemon zest

  • 1 tsp lemon juice

  • 1/2 tsp vanilla extract

  • Pinch of salt

  • 1 cup all-purpose flour

  • 1/2 cup granulated sugar

  • 1 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup unsalted butter (melted)

  • 1/2 cup milk

  • 1/2 tsp vanilla extract

  • Optional: coarse sugar for sprinkling

Directions

  • Preheat oven to 375°F (190°C). Lightly grease a 9-inch baking dish or similar size.
  • In a medium bowl, mix blueberries with sugar, cornstarch, lemon zest, lemon juice, vanilla extract, and a pinch of salt. Toss to coat, then pour into the prepared baking dish.
  • In another bowl, whisk flour, sugar, baking powder, and salt. Add melted butter, milk, and vanilla. Stir until just combined (don’t overmix).
  • Drop spoonfuls of the batter evenly over the berries. It doesn’t need to cover everything — it will spread while baking. Optionally, sprinkle coarse sugar on top for a crunchy finish.
  • Bake for 35–40 minutes, or until the top is golden brown and the blueberries are bubbling.
  • Let it cool for at least 10–15 minutes. Serve warm with ice cream or whipped cream.
