minutesTo make your cassava broth, you will need to use the ingredients below and follow the preparation instructions.
Ingredients
1 kg of cassava, peeled and cut into pieces
1 large onion, chopped
2 cloves of minced garlic
2 tablespoons olive oil
1 liter of vegetable broth or water
Salt and pepper to taste
Chopped chives to finish (optional)
Directions
- In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until soft and lightly browned, about 5 minutes.
- Add the cassava pieces to the pan and mix well with the onion and garlic.
- Add enough vegetable stock or water to the pan to completely cover the cassava pieces. Season with salt and pepper to taste.
- Bring to a boil, then reduce heat to medium-low. Cover and simmer for about 20-25 minutes, or until the cassava is tender enough to easily mash with a fork.
- Remove the pan from the heat and, using an immersion blender or a regular blender, blend the mixture until you have a smooth, creamy broth. If you are using a regular blender, be careful when transferring the hot broth to the blender.
- Return the blended broth to the pan and heat again, just to warm.
- Taste and adjust seasoning if necessary, adding more salt and pepper to taste.
- Serve the cassava broth hot, sprinkled with chopped parsley if desired. It can be served with toast or bread for a comforting meal.
