Ingredients
1 medium cassava, peeled and cut into small pieces
1 medium onion, chopped
2 garlic cloves, chopped
2 tablespoons of vegetable oil
1 carrot, peeled and cut into slices
1 medium potato, peeled and cut into cubes
1 ripe tomato, chopped
1 bay leaf
Salt to taste
Black pepper to taste
Chopped green chives (parsley and chives) for garnish
Water (approximately 2 liters)
Directions
- In a large pan, heat the oil over medium heat.
Add the onion and garlic, sautéing until they are golden. - Add the cassava, carrot, potato and tomato.
Stir well to mix the ingredients. - Add enough water to cover the vegetables in the pan.
Add the bay leaf, season with salt and pepper to taste. - Bring to a boil, then reduce heat to medium-low.
Cook for about 20-30 minutes, or until all the vegetables are soft. - Remove the bay leaf and then use a blender or hand mixer to puree the vegetables until they reach a creamy consistency.
If you prefer a thicker soup, you can leave some pieces whole. - Adjust seasoning if necessary.
If the soup is too thick, add more water until it reaches the desired consistency. - Serve the soup hot, garnishing with chopped green chillies on top.
