The suggested ingredients to make your cassava soup are the following:

Ingredients

  • 1 medium cassava, peeled and cut into small pieces

  • 1 medium onion, chopped

  • 2 garlic cloves, chopped

  • 2 tablespoons of vegetable oil

  • 1 carrot, peeled and cut into slices

  • 1 medium potato, peeled and cut into cubes

  • 1 ripe tomato, chopped

  • 1 bay leaf

  • Salt to taste

  • Black pepper to taste

  • Chopped green chives (parsley and chives) for garnish

  • Water (approximately 2 liters)

Directions

  • In a large pan, heat the oil over medium heat. 
    Add the onion and garlic, sautéing until they are golden.
  • Add the cassava, carrot, potato and tomato. 
    Stir well to mix the ingredients.
  • Add enough water to cover the vegetables in the pan. 
    Add the bay leaf, season with salt and pepper to taste.
  • Bring to a boil, then reduce heat to medium-low. 
    Cook for about 20-30 minutes, or until all the vegetables are soft.
  • Remove the bay leaf and then use a blender or hand mixer to puree the vegetables until they reach a creamy consistency. 
    If you prefer a thicker soup, you can leave some pieces whole.
  • Adjust seasoning if necessary. 
    If the soup is too thick, add more water until it reaches the desired consistency.
  • Serve the soup hot, garnishing with chopped green chillies on top.
