Ingredients

  • 2 cups of corn flour

  • 1 cup of wheat flour

  • 1 cup of sugar

  • 1 cup of milk

  • 3 eggs

  • 1/2 cup vegetable oil

  • 1 tablespoon baking powder

  • 1 pinch of salt

  • Optional: fennel or cinnamon powder for flavor

Directions

  • Preheat the oven to 180°C. Grease and flour a cake pan.
  • In a large bowl, mix the corn and wheat flours, sugar and salt.
  • In another bowl, beat the eggs lightly and add the milk and oil. Mix well.
  • Pour the liquid mixture into the flour mixture and stir until everything is well combined. If desired, add fennel or ground cinnamon for flavor.
  • Lastly, add the baking powder and mix gently.
  • Pour the batter into the prepared pan and bake in the preheated oven for approximately 30-40 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let cool before unmolding. Serve the cornmeal cake in slices and enjoy!
