Ingredients
2 cups of flaked corn flour
1 cup of water
1 tablespoon of butter
1 teaspoon of salt
1 medium chopped onion
1 chopped medium tomato
1 chopped small bell pepper
2 minced garlic cloves
2 tablespoons of olive oil
1 tablespoon chopped cilantro (optional)
salt to taste
Directions
- In a large bowl, place the flaked corn flour and add the water little by little, mixing with your hands until you get a wet and grainy consistency.
Reserve. - In a large pan, heat the oil over medium heat and saute the onion, garlic, tomato and bell pepper until soft.
- Add the butter and mix until melted.
Season with salt and chopped cilantro, if desired. - Add the cornflour mixture to the pan and mix well to incorporate the ingredients.
- Cover the pan and cook over low heat for about 10 minutes, stirring occasionally to prevent sticking to the bottom.
- Remove the pan from the heat and let it rest for a few minutes.
- Unmold the couscous into a large plate or mold with a hole in the middle, pressing gently to ensure it is compact.
- Serve couscous slices accompanied by butter, curd cheese, milk or coffee.
