Ingredients
500g hominy corn (white corn)
1 liter of water
1 can of condensed milk
1 can of milk (use the can of condensed milk as a measure)
200ml coconut milk
1 cup sugar (or to taste)
2 cloves
1 piece of cinnamon stick
1 pinch of salt
Cinnamon powder for sprinkling (optional)
Directions
- Wash the hominy corn well under running water.
Then place it in a pressure cooker with 1 liter of water and let it soak for at least 4 hours or overnight. - After the soaking time, cook the hominy in the pressure cooker.
Make sure the water completely covers the corn.
Cook over medium heat for about 30-40 minutes after coming to pressure.
The corn should be soft but still whole.
If necessary, add more water during cooking. - After cooking, drain the hominy and set aside.
- In another pan, add the condensed milk, milk, coconut milk, sugar, cloves, cinnamon stick and a pinch of salt.
Mix well and place over medium heat. - When the mixture starts to boil, add the cooked and drained hominy.
Cook over medium heat, stirring occasionally, for approximately 20-30 minutes, or until the hominy is very creamy and the broth thickens. - After reaching the desired consistency, remove the hominy from the heat and let it cool slightly.
- Serve the creamy hominy in individual bowls and, if desired, sprinkle with ground cinnamon on top.
You can serve it hot or cold, depending on your preference.
